A german magazine, testing VeraCrypt, mentions that it is possible to hide all VeraCrypt Bootloader screen text during booting. It would even be possible to show customized text (e.g. "Missing Operating System") in order to hide VeraCrypt existence.

However I didn't find any of these options/settings.

Any idea ... ?!

You can edit DcsProp file on EFI system volume

To edit execute from admin cmd:
mountvol z: /s
notepad z:\EFI\VeraCrypt\DcsProp

key "PasswordMsg"

That worked fine. Thanks a lot.

Two more questions.
  1. (cosmetic) - After VC Password entry during booting my Windows 7, I see an initially flashing, later on steady underscore in the left middle part of the start screen (showing "Windows Starting"). Is it possible to get rid of the underscore?
  2. Where are the other DcsProp keys explained? Some are not intuitive.
