File format compatability between Mac and Linux? Getting read-only error

When creating a new volume (on Mac) I get the option of encryption algorithm of

AES and SHA-512 I leave those at the default, make a password, then at the

FORMAT OPTIONS Filesystem choices are FAT and Mac OS Extended, I am guessing that FAT is compatible across devices, yes?

When I chose FAT I don't get the option to Quick Format.

Anyhow, now the USB will mount in Ubuntu, but I can't save any new files in the volume, I only get error: Could not save the file "/media/veracrypt3/<filename> You are trying to save the file on a read-only disk. Please check that you typed the location correctly and try again. [cancel button]

I have it mounted, I see the volume in my file manager just fine.

Just a side question, if I were to reformat the USB, what format should I use? I would guess from the ubuntu disks app.
