Possible to clone current system drive to external drive + boot loader to create encrypted system on separate disk

I have looked through the documentation, but cannot determine if this is possible.

I have a normal system running on disk 1 (which has 1 unencrypted volume).

I would like to attach disk 2 (externally via usb enclosure), which is completely blank, and put the veracrypt bootloader and a verbatim copy of disk 1 (but encrypted).

Then I can just physically switch disk 1 and 2 in the machine afterwards and have an encrypted system.

I have two reasons for using a different disk rather than just encrypting the system in place. First it allows me to just revert to disk 1 should anything go wrong in the process, and also I am simultaneously swapping in an SSD as disk 2 for increased speed over disk 1.

Disregard. I realize it's not much harder to just clone to SSD, boot off that, and encrypt in place, retaining the old drive as a fallback. Sorry for forum clutter.
